Chicken Taco salad
Anyone who knows Dr. bear knows how he loves Mexican food.
When we decided to try a low fat, low calorie diet the dinners
we missed the most were the Mexican dinners at the El Puerto in
Edmonds. So we headed to the grocery store with our
reading glasses and calculator to see what combinations with a
Spanish flavor we could substitute for our esteemed El dinners.
The following taco salad is a delightful combination of flavors
and if you follow this recipe you will have a huge plate of food
at about 400 calories. If you prefer a veggie salad,
substitute low fat canned Pinquito beans (80 calories for 127
grams [1/2 cup] serving). We use a low fat flour tortilla,
sprayed with a butter-flavored cooking spray, draped over a
small glass oven proof bowl and baked for about 20 minutes until
crispy to make a "Northern Style" shell for the salad
